Well it was our turn to bring food for a Monday night get together we have with some friends each week. and being it just happened to also be the fifth of May, I thought I better do something that would fit with Cinco De Mayo and Taco Soup seemed to fit the bill.
So with what I already had on hand and a quick run to the store after work, it was time to get cooking
For the most part Taco soup is just a lot of dumping in and finishing off with lemon juice and some taco seasoning to taste. I used vegetarian chili, black beans, diced tomatoes and green chilies & corn, along with quinoa and a little bit of cooked sweet potato and kale that I already had cooked.
So with the soup on to simmer it was time to do the prepping for the toppings

I thought the canning jars would make kind of a pretty way to show off the fresh colors.
When the soup is done it is time to dish up and pile on the toppings with some corn chips, sour cream and cheese added along with all the fresh veggies
Then finish it all off with a squeeze of the fresh lime over the top
Talk about a flavor burst in you month! yum!
