Still having the apple pie filling that I had made from the granny smith apples.
And the fact that I was heading to a Vegetarian Cooking Club having a Cinco De Mayo themed food night.
I wanted to take the baked apple burrito and turn in to more of a plated dessert taco wrap.

This time I used whole grain wheat tortillas and kind of having the thought in mind of elephant ears, I started by putting the wraps on the griddle pan and let them get hot, then brushed some softened vegan earth balance over them so they would be ready for the cinnamon sugar mix I made for dipping them into.
Now it was time to dip them in sugar
Dip both sides in the sugar & cinnamon mix
Adding the hot apple pie filling
for the glaze I used the silken tofu and then blended it with vanilla and sugar with fresh lemon zest and lemon juice.
Yum, yum! I think they turned out very well! Everyone liked them at the cooking club. :)
